Ukadiche Modak

Ingredients:
For the Outer Covering:
- 1 cup rice flour
- 1 cup water
- A pinch of salt
- 1 tsp ghee (clarified butter)
For the Filling:
- 1 cup grated fresh coconut
- 3/4 cup jaggery, grated
- 1/2 tsp cardamom powder
Instructions:
- Heat water in a pan, add a pinch of salt and 1 tsp of ghee.
- Once the water boils, lower the heat and add the rice flour. Stir continuously until it forms a dough-like consistency and leaves the sides of the pan.
- Remove the dough from the heat and let it cool slightly. Knead it into a smooth dough when it's still warm.
- In a separate pan, melt the jaggery on low heat until it becomes a syrup. Add the grated coconut and cardamom powder. Cook until the mixture thickens and comes together. Remove from heat and let it cool.
- Take a small portion of the rice flour dough, flatten it into a small disc, and shape it into a cup with your fingers.
- Place a spoonful of the coconut-jaggery filling inside the rice dough cup.
- Carefully seal the edges of the dough to form a modak shape, ensuring there are no cracks.
- Repeat the process for the remaining dough and filling.
- Place the modaks in a steamer and steam them for about 15-20 minutes until they become translucent.
- Allow them to cool slightly before serving. Ukadiche Modak is ready to be enjoyed!
Note: You can use a little ghee to grease your hands while shaping the modaks to prevent sticking.
